French Toast Casserole
Ingredients:
- ½ loaf French bread
- 6 eggs
- 1 ½ cups milk
- ½ cup brown sugar
- ½ cup butter
- 2 tsp. cinnamon
- 1 tbsp. vanilla bean paste
This is a make-ahead recipe that needs to be refrigerated overnight (or at least for a few hours).
Directions:
Cube French bread into 1-2” pieces.
In a medium sauce pan, heat butter and brown sugar on the stove over medium heat until melted.
Combine eggs, milk, cinnamon, and vanilla bean paste. Whisk well.
Grease or spray pie or casserole dish. If you use a casserole dish you may be able to use a full loaf of French bread.
Pour the brown sugar and butter mixture into the prepared pan.
Top with French bread.
Pour the milk, egg, cinnamon, and vanilla mixture over the bread pieces. Toss it around a bit until every piece is fully coated.
Cover and refrigerate for at least 4 hours.
Bake at 350F for 30-45 minutes or until the bread is no longer soggy. The actual time will depend on the type of milk and bread you used, as well as your own oven settings.
Notes:
If you use too much milk, you may find your casserole is still soggy at the bottom. If this happens, use a spatula to flip parts of the casserole over, and continue baking for another 10-15 minutes.
Cooking times vary greatly depending on the amount of bread and milk as well as the type of bread you use, so be sure to keep an eye on it after about 30 minutes!
