    • 8 pecan halves
    • 4 medium-sized marshmallows

    • 2 tbsp maple syrup
    • 1/4 tsp salt

    Directions:

    Preheat the oven to 425°F (220°C).

    Peel the sweet potatoes and cut each potato into 4 even slices.

    In a bowl, pour the melted butter over the sliced sweet potatoes. Season with salt and mix until the potatoes are evenly coated.

    Arrange the coated sweet potato slices on a baking tray and bake in the preheated oven for 15 minutes. After 15 minutes, flip the slices over and continue baking for an additional 10 minutes.

    Remove the sweet potatoes from the oven and switch on the grill/roast setting.

    Drizzle the maple syrup over the sweet potato slices.

    Cut the marshmallows in half and place them on top of the sweet potato slices.

    Roast the sweet potatoes with the marshmallows under the grill for about 2-3 minutes, keeping a close eye to prevent burning.

    Once the marshmallows are toasted and slightly golden, remove the tray from the oven.

    Place a pecan half on top of each marshmallow-topped sweet potato slice.

    • 1 large chicken breast, cubed

    • 1 tsp salt

    • 1 tsp Italian seasoning
    • 1 tsp paprika
    • ¼ cup Buffalo Wild Wings Garlic Parmesan Sauce (or make your own)
    • 1 cup of shredded cheese (any kind)

    Instructions:

    Spray the inside of your crockpot with nonstick, olive oil, or a liner.

    Wash the potatoes then cube and add to the slow cooker.

    Drizzle olive oil on the potatoes.

    Season with salt, pepper, garlic powder, Italian seasoning and paprika.

    Toss to coat.

    Cut the chicken into cubes and lay on top of the potatoes.

    Season chicken with salt and pepper (and any other seasonings you’d like)

    Top with garlic parmesan sauce.

    Cook on HIGH for 2.5-3 hrs. (5.5-6 on low) or  until potatoes are tender.

    Stir everything well.

    Top with shredded cheese and cover for 5-10 mins until melted!

    • 2 russet potatoes
    • 1 tbsp corn starch
    • 1 egg, large
    • 1 tsp salt
    • 1 tsp pepper
    • Oil for frying

    Instructions:

    Begin filling a pot with water and heating on high.

    Peel the potatoes. Cut into thirds. Boil for 10 mins.

    Remove and place immediately into an ice water bath for 3-4 mins.

    Drain off the water.

    Grate the potatoes.

    Add salt, pepper, corn starch and egg.

    Mix until fully incorporated.

    Form patties and place on a parchment lined cookie sheet or plate.

    Freeze for 30 mins.

    Heat oil (olive oil or vegetable oil works).

    Fry until golden brown on both sides (about 7-8 mins).

    Remove, drain on paper towel, sprinkle with salt.
