    Ingredients:

    • 4 colored bell peppers
    • 2 cups cooked shredded chicken
    • 8 oz softened cream cheese
    • 1 packet dry ranch dressing
    • 1/2 cup shredded cheddar cheese, divided
    • 8 slices cooked bacon, crumbled

    Directions:

    In a mixing bowl, combine the shredded chicken, cream cheese, ranch packet, half the cheddar cheese, bacon and mix until combined. A stand mixer is great for this.

    Wash the peppers, cut the tops off, and remove the seeds and ribs from the inside of the pepper. Stuff each pepper with about 1 cup of the chicken mixture.

    Instant Pot Brussels Sprouts with Bacon

    Ingredients:

    • 1 bag of fresh brussels sprouts
    • 1 tbsp. olive oil
    • 2 tsp. minced garlic
    • ½ onion, chopped
    • 6 slices of bacon, sliced
    • ½ tsp. salt
    • ¼ tsp. black pepper
    • 1 cup water

    Directions:

    Wash and trim brussels sprouts, you can leave them whole or cut them in half.

    Pour water into the Instant Pot liner.

    Use a steamer basket or place the Instant Pot trivet into the liner.

    Pour in brussels sprouts.

    Press Manual and set time to 3 minutes.

    • 1 lb. petite gold potatoes
    • 1 lb. petite red potatoes
    • 1 cup beef or chicken broth
    • seasoning of your choice
    • 1 cup sour cream
    • 1 cup buttermilk ranch dressing
    • ¼ cup milk
    • 1-2 cups shredded cheddar cheese
    • ½ cup shredded mozzarella cheese
    • ½ cup real bacon bits

    Directions:

    Wash and half or cube the potatoes.

    Place the potatoes in the Instant Pot inner liner and pour in the broth and seasoning.

    Ingredients:

    • 10-12 strips bacon 
    • ½ yellow onion, diced 
    • 1 celery stalk, diced 
    • 1 carrot, diced 
    • 1 tsp. garlic powder 
    • salt & pepper to taste 
    • 2 cans great northern beans, drained & rinsed 
    • 3 cups chicken broth 
    • 1 bay leaf
    • 4 oz. tomato sauce

    Directions:

    In a large pot over medium high heat cook bacon until crispy then move to paper towel lined plate.

    In same pot keep 2 tablespoons of bacon grease to cook onion, celery, and carrots for 5 minutes. 

    Add in beans, broth, garlic powder, salt & pepper stir until well combined. 

    Toss in bay leaf. 

    Bring to a boil then reduce to medium low and simmer for 1 hour. 

    Remove bay leaf. 

    Blend with an immersion blender. 

    Add tomato sauce and ½ the cooked bacon.

    Season with salt & pepper to taste. 

    Ladle into bowls, garnish with bacon and parsley, serve immediately.

    Southern Baked Mac and Cheese

    Instant Pot Mac and Cheese

    Baked Mac and Cheese with Ritz Crackers and Bacon Topping

    Ingredients:

    • 1/2 Pound Elbow Macaroni Noodles
    • 12 oz. Velveeta
    • 1/2 Stick Butter
    • 1/2 Cup Half & Half
    • Shredded Cheese
    • Ritz Crackers
    • Cooked Bacon (cut in small pieces)
    • Salt & Pepper

    Directions:

    Preheat the oven to 400 degrees.

    Cook the noodles according to the directions on the box.

    While the noodles are still hot, add the half & half, butter, and Velveeta.

    Add the prepared mix to a baking dish.

    Crumble the Ritz crackers and sprinkle on top in a layer.

    Add desired amount of shredded cheese on top of the Ritz crackers.
